* Exported from MasterCook * Roasted Garlic Power Recipe By :Norman's New World Cuisine - pg. 281 Serving Size : 1 Preparation Time :0:00 Categories : Onions & Garlic Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 each garlic bulbs 2 cups olive oil 2 sprigs fresh thyme 1 sprig fresh rosemary 1 each bay leaf 12 each black peppercorns -- slightly crushed Preheat the oven to 300. Cut off the tips of the garlic heads and peel off some of the papery outer skin. Arrange the garlic heads snugly, side by side, in a casserole dish or roasting pan. Pour enough olive oil over them to cover them completely. Scatter the herbs and peppercorns over the garlic and submerge in the oil. Cover the dish with aluminum foil and bake in the preheated oven from 1 to 1 1/2 hours. Remove the pan from the oven and allow to cool. Squeeze the garlic out of the husks and into a bowl. If you want chopped roasted garlic for another recipe, chop the firmer cloves. Otherwise, mash the garlic with the back of a fork, place into a nonreactive, airtight container and reserve for another use. Strain the garlic-insfused oil through a fine mesh strainer into a clean bottle or container and store this Roasted Garlic Oil until needed.
